UP CLOSE: With the chef revolutionising the traditional Friday night takeaway

Today we caught up with Joanne Kay, who runs Roots and Seeds Vegan Takeaway.
With the lockdown stopping us from going out to eat, takeaways are enjoying a boom in popularity.
If you're vegan, however, you could find your choices are limited. But a new Farncombe-based business could be just the answer to your Friday night cravings.
Roots and Seeds Vegan Takeaway was started by Joanne Kay in November last year, halfway through the second lockdown.
Joanne, a beauty therapist, lost her job when the first lockdown kicked in in March. So she set up as a freelance - only to be shut down by the second lockdown just four weeks later.
Having worked in the past as a sous chef, she decided to utilise that second string to her bow and launch Roots and Seeds Vegan Takeaway, producing delicious vegan dishes and desserts from her own kitchen.
She is registered with Waverley Borough Council as a food producer, and has jumped through the hoops to get the necessary food hygiene and safety certificates.
Items on the menu, which changes from week to week, include burrito bowls with mixed bean chilli or chipotle jackfruit, falafel bowls, butterbeans with Persian rice, sweet potato coconut curry, and Puerto Rican tofu.
Sides include sweetcorn salad, beetroot salad, chips and spicy potato wedges, and the range of sauces includes houmous and guacamole.
Desserts include chocolate and chilli brownie, millionaire's shortbread, and mango and coconut chia pudding.
Joanne told Godalming Nub News that she had had a "really positive" reception and "really good feedback."
She cooks every Friday, advertising through Facebook and Instagram, and boyfriend Matt delivers the orders. She also runs an order-and-collect service for people living nearby. Delivery is free within a three-mile radius but there is a small charge for deliveries to places further afield.
She plans the menu and does the shopping early in the week, ready for the big cook on Friday. The delicious results are also available to order for collection or delivery on Saturdays.
"I try and mix it up a little bit, and make it different each week, with maybe a new side dish," she says. "I think if I was to do the same thing all the time I would be bored!"
It's not just vegans ordering Joanne's dishes either. Some people are ordering to try something different, as well as those who know just how great good vegan food can be.
"Some people are just apprehensive – they feel like something will be missing," she says. "It's something different for a lot of people."
But judging by the amount of repeat custom she is getting, plus the great reviews, it appears that Joanne's vegan takeaways are a whole new way of looking at the traditional Friday night takeout.
